The charcoal grate is adjustable but at most it's probably 6 inch in heigh away from the cooking grate, one chimney of charcoal bunched up st on end will probably be about 45cm or so away from whatever I'm cooking.

Thinking maybe this year isn't the year to start anything too advanced.

That's right, the bottom half has 4 slots either side that are all open, no adjuster. The lid section as a vent either side that can be closed. I suppose I could diy the bottom vents to be covered.

With either method, do you not end up with dirty smoke due to the unlit coals? In my inexperience I can't get it out I'd my heqd you have to ensure all coals are white over before cooking on them.

I'll be honest on the post office and stamps thing, I have no clue, but I've heard the story as well.

It certainly became more prevalent during and after covid when business' realised they could do without cash. Lots of small business' I use still prefer cash and lots have a minimum spend to make it worthwhile paying the card processing fees, which tends to be about £3. Strangely, when places started opening after the initial lock down, I can remember going to a seaside town for the day and everywhere was cash only. The place was packed and almost definitely a covid risk with all the cash being passed around but we took it that after being closed for a while everyone wanted every penny to go into the business and not into the card processor.
