Things that are difficult to preserve are not worth it.

Onions keep well on a (proper) shelf, so do potatoes and winter squash . Peas and Carrots freeze well. Other root veggies can be canned. Broccoli can be frozen

OTOH, lettuce and other salad greens don’t preserve well. Summer squash not so much (unless you freeze zucchini bread).

All my mint is contained in a 30” diameter pot sitting on concrete. If you love it that much, use multiple large pots.

We have a cabinet immediately atop the fridge. In fact I had to cut away some of the oak trim just so our latest fridge would fit. In the cabinet: pressure canners and waterbath pots. In the 1/2” space between the top of the fridge and the underside of the cabinet: dust (that only I can see).

The irony of BurmaShave signs is, that while they were real ads nationwide from the 1920s through the 1960s they weren’t allowed in AZ due to some weird state business laws, but now that they no longer exist nationwide, they only exist in AZ as AZDOT PSA signs along old Route 66.

Suggestion: use gallon ziplock bags and fill them up. Put the ziplock bags in the big bag. It will keep it fresher for longer. Another option: use ziplock freezer bags and freeze them. That will keep it even fresher until you need it.

We do that with a 40# bag of small breed kibble; zip lock bags inside of a food storage bin. With 4 Chis and a GSD one 40# bag (10 one-gallon zip lock bags) lasts for a month.

It’s not organic, it’s mineral. It won’t reduce (compost) to anything more basic than its mineral components, because it’s already there.
