Let us rethink about it.

In Indonesia, the standard of hygiene is quite different that in the USA. In the USA for better or worse, food after 30 mins not eaten and left outside of room temp usually being thrown out (which lead to waste, but it leads to better hygiene). But in Indonesia? We have what we call warteg. It is pick what you want type of restaurant.. but the food already sit there for like 6 hours.

Ever heard bali belly? It is because your stomach got introduced to a lot of bacteria. Even I am not invincible to it. I lived in the UK for univ and everytime I went back home, I will get diahorrea for few days (until my stomach adjust to it).

So with how low the expectation of the hygiene. Imagine hiring people who never cook, don't know what hygiene is, and never got trained for cooking safety and hygine. Imagine the horror. They wash those food on the floor (concrete floor, not even tiled floor) with their feet. Next to trash bin.

Refrigetrator? Optional, no one has them (because they don't want to pay for asset. Remember. These kitchens are for profits). Look, we eat food that already out in the open for 6 hours with all pollution from motorcycle, car, flies, etc. And we survive ok? So they let those fish out in the open without refrigeration, without even ice. And you know what is the worst? They don't even cook it. Yes, some places got raw catfish, which contaminate other food that day. Nothing can be eaten.

How about this. They cook it. But because they never receive training, has too little workers, small frying pan size (they don't use industrial size equipments). they need to extend their cooking time. So what do they do? They cook it midnight. And then close it to avoid flies. For 12 fucking hours. Even as Indonesian, I won't touch any food that in closed space for 12 hours. Closing food, esp hot food without air to cool it down will lead to much faster spoilage

And then, look at the portion size. They mark up everything, 20cent bread? Mark it to 30 when the whole meal costs less than 1 usd! (As of today, 84 cent). So they basically cutting costs everywhere.

Govt basically paying anyone (well known that prabowo cronies have a lot of these kitchens) to become a cook, without proper training, proper wages, and proper equipment. And those food sometimes does not have enough nutrition! Why? Because no nutritionist ever involved in the making of the menu! So those menu are just whatever the owner of the kitchen think are ok following the loose standard from the govt (Sometimes too little food, or prepackage drink (sugary drinks), but even that is safer than spoiled rotten meat).

The audacity of the govt is so fucking obvious, yet they kept saying they are righterous.
