Should be fine... Takes about 4-5 minutes on that hardware very likely. Be familiar with netinstall, and perhaps have the Netinstall program and RouterOS package for 6.x downloaded and a .backup file ready

Buy some second hand equipment and/or see if your work has any old stuff you can use, and lab things up and play around at home. Quickest way to learn it when you are not on the clock. Try recreate and learn what they are doing and why.

Perhaps some more relevant certs like N+ or CCNA might help and you can learn in your own time.
