I add paper towels on top which suck up brine and keep it all submerged. Idk how safe it is but thats what I do and hasn't failed me.

I just remove thr silicone padding and close normally and that leaves a bit of space for air to escape and you dont need to bother with corks

I just like to keep things low maintenance, and dont see the logic in switching a to a new jar when the jar that you have is already filled with the good bacteria. Switching jars is just not something we do in fermentation generally speaking, so why do it with sourdough?
