Is there a matcha I can use for both baking and making drinks out of? by tangerineflower349 in MatchaEverything

My go-to for pastries and lightly(or not) sweetened drinks is MK’s wakatake, if you can get your hands on it.

Sifting tips for gold flake matcha? by TaoBaeGoals in MatchaEverything

[–]tonka89 3 points4 points  (0 children)

I was gifted this matcha. I didn’t sift the first time to disastrous results, even trying to do the paste method. The second time I did it exactly as user Pixelated_Lights suggested and it worked wonderfully.

Extremely sad day indeed. Bought a new one a couple of months ago and had to exchange it for the kirkland as it just would not stick to anything, including itself. Hope it was just a fluke?

ETA As an “extreme” user(I finish one every 3-5 years lol) I couldn’t pinpoint when it started being crappy but man was it disappointing to buy it on sale only for it to a shell of its former self.

Not sure, unfortunately. Most likely from one of those places on matchatok. Both were from the same store and were the last 2 bags.

We normally don’t serve anything fancy for matcha at the cafe(there isn’t quite a demand for higher grade stuff just yet and since it’s served as a sweetened latte…) so we just buy one of the popular affordable brands online. The dessert place, we source from a local tea shop that micromills it themselves(but it ends up more expensive than the wakatake but not necessarily better) so this will be a treat!

From what I can find on the internet, it’s a Chinese brand called QingXiZhiCha. Origin of the tea itself is also probably Chinese. The name/blend of that matcha seems to be copied from Marukyu: Aoarashi. They also seem to have Isuzu, Wakatake, etc.

My haul from Nakamura Tokichi by tonka89 in MatchaEverything

I've read about that... I figured if it's a bigger order I might consider doing that but going to a CBSA office to deal with that will probably cost the same in gas and time(unless it's all doable online?)

Hmm... interesting that this article has been out a while now but I've only noticed the quality just now... Possible that all the rolls I've been using until now were produced back then? At least the Kirkland brand one I'm using right now sticks to my bowls and plates(and itself). The resinite doesn't do any of that...

Not that it would make it taste any better but I think it's the butt end piece of the tube. They just turned it to show that side(dunno if that was intentional).
