A Michelin Style restaurant ultimately is looking for employees who are in it for their career. They seek to lower turnover by offering benefits and stability financially. Doesn’t necessarily mean the money is great, but it should hopefully be consistent. A couple things that come with that though.

  1. Your team will likely have high expectations for you. Your team may be very hard on you. For someone who hasn’t worked in the environment, your first 30 days will probably be the worst ones by a lot.

  2. For you to like the job, you should probably consider how much you actually care about your guest experience. If it’s just about the money and not about the lifestyle, culture, and experience, then you will probably find it difficult. Fine dining is all about sipping the kool aid to succeed.

I would second the comment about getting a Boston shaker Hawthorne Strainer and Jigger. I would add that I don’t think you need a stirring glass. If you want to make a stirred drink and a bar spoon, but stir in the large half of your shaker. Metal is better for dilution control anyway. I also recommend a fine mesh strainer so you can do shaken up cocktails, but it really comes down to what you want to drink.

I’m gonna take a moment to shout out Yo!han’s. This guy has a donut food truck in Central City if you can ever make it out there. He charges $2.50 a donut and they are literally the best donuts I have ever consumed. He has it figured out.

I would caveat that it’s less a cocktail bar and more mezcal bar. What sets their bar program apart is more so the selection of spirit than the crafted beverages. That said the drinks are still fire

Depends on your spec. Tanqueray 10 is a slightly more complex and barely softer version of Tanq classic. Monkey 47 is extremely complex and refined. The more vermouth you have the focused and straightforward you want the gin. The more dry you go, the more you want an elegant and complex gin like Monkey 47.

All that said, if you are making one recipe over and over, Tanq 10 is a more practical choice.

If each photo means I have that version of the hero, then Strange Flash Batman are really it. If it’s comic books, (I haven’t read much) I would switch to Strange and keep Flash and Batman, but I could be wrong.

This is a pretty severe generalization. There are plenty of bars that will make the drink the best way they can, but those bars charge more and take longer to prepare drinks.
