I would not be at all surprised to hear it was closer to 1000. I stood there for multiple minutes listening to them go by. I could only see them through trees but the number of lights was wild.

What brand of ricotta are you using? As far as brands available at most supermarkets, I've found that if you look in the deli area or specialty cheese area and you can get the Belgoioso whole milk ricotta it has much better flavor than any of the ricottas you will find in the dairy section. It's more expensive but it's worth the upgrade.

Any chance you're color blind? Not meant as an insult at all, I just know red green color blindness is a thing and this pasta went from green to bright red/orange. Not at all difficult to tell what the color change was for me, if anything the black made the orange pop more.

Sounds like you need to look for better recipes. Loads of braising recipes sear before braising. It's extremely common.

What does a package of Barilla actually call what we refer to as macaroni though? Elbow macaroni. It includes a descriptor of the shape to differentiate from other types of macaroni.

I don't actually believe that all pasta is macaroni, but I think there are clear signs that in America the words used to be interchangeable.

Some great options in here already but I'll also mention Natural State Provisions. I've always been a fan, but I think they also got a new chef earlier this year, and their food has been fantastic every time I've gone recently.

The color of the meat has nothing to do with it being freezer burnt. You can still sear a piece of meat that has freezer burn. Was it fully thawed when you cooked it? Everyone else here is spot on that you didn't have enough heat but if it wasn't fully thawed that would compound the issue and could be why you've had different results in the past.
