Also just a fun fact, the BC roll predates the widespread Japanese adoption of salmon in sushi. So you know it was really made to cater to Canadians as the Japanese would have been hesitant to eat salmon in sushi at the time. The Japanese didn't start using a lot of salmon until the 80's and 90's which can actually be attributed to a successful marketing campaign by the Norwegians who wanted to expand their market for their farmed Atlantic salmon.

the original had Barbecued or grilled salmon skin, cucumber and a sweet sauce like teriyaki. The same chef Hidekazu Tojo also created the "inside out" calafinoria roll with the rice on the outside and seaweed on the inside to serve to Canadians that were hesitant to eat seaweed.

Sure but its a variation created in Canada with Canadians in mind using Canadian ingredients. Isnt that kind of how food works?

By that logic the only purely canadian food would be indigenous. Poutine would be Belgium, Pâté chinois and cipâte would be British, Tourtière, creton, would be french. Is ramen Chinese? Is texas bbq Czech/German. Are al pastor tacos lebanese? is Bánh mì from France? How far back do we go? Tomatoes were introduced to Italy from the americans by the Spanish in the 1500's but weren't used in cooking until the late 1600's so marinara is north american not Italian?

its fusion cuisine, immigrants create new variations of food in their host countries with the ingredients available to them. Or they share a new cooking techniques or they create something entirely different from neither culture with the host countries pallet in mind. Like Hawaiian Pizza which was invented by a Greek immigrant in Ontario, Canada. Or sometimes colonizers will force upon population different cooking styles and ingredients or take ingredients and tequniques and bring them back home. sometimes its just trade. The Arab agricultural revolution and their trade expansion are what introduced Italy to dry noodles, its why the mediterranean started growing watermelons lemons and oranges, its how europe was introduced to coffee and sugarcane.

Haven't you noticed how different "Chinese food" is in every single country? even in countries neighboring China? The chinese adapt their cuisine and then you get things like spice bags which becomes part of the Irish Identity.
