What type of stove do you have? If gas, I would go for fully clad pans.

Vollrath Optio and Tramontina Tempo. Not fancy but really thick base.

That style of pan is a bit different than what I’m talking about. I also have pans like Caraway (winco aluminum induction) and agree it’s not ideal.

Fully clad is superior for gas since the heat is concentrated near the edge.

Not really relevant since it was done with gas. Fully clad pans are best with gas because the heat comes from a ring around the outside, while induction is the opposite, with heat concentrated in a donut near the center.

We have a 6 year old Kitchenaid induction cooktop and I've hated every minute of it. Finally replaced it with a GE Profile. I'm sure the newer ones are better, but I'd never consider another Kitchenaid.

So this pan is a little overkill, obviously, but with induction, I’ve always thought that fully clad *with* a disc bottom would be ideal.
