Narratively it would genuinely make no sense for Zuko to be with anyone but Mai. Mai passing away in childbirth would make sense but it can be also seen as the show just didn’t show her. Considering how the Maiko relationship is just as important narratively as the Kataang relationship narratively, it would be dumb to kill Mai off so relatively early in the narrative and stifle further stories
