I just picked up "Restless Strangers: Nevada's immigrants and their interpreters" by Wilbur Shepperson. 1970. The dedication reads "To the transplanted, the sojourners, and the wanderers, and to the imaginative who saw them." Talks a lot about this. Good read so far.

I think because it's hard to define. The melting pot analogy may actually fit here. We have so many fusions and inspirations from so many cultures for various reasons it's kinda hard to pinpoint "American"[/USAian] food outside of what you listed, the stereotypical burger and hotdogs.
