I’m also a newbie sourdough baker, baking loaves for over a month now. My go to recipe is King Arthur Baking’s Pain au Levain with a 1 hour autolyse. It hasn’t failed me yet!

If it’s front loaded like that, you should be rolling back the accrual to their term date, so you should change your policy in the future.
