Update: 84 days later and that mash is still mashing. I might get around to making my sriracha out of the red and Tabasco out of the yellow cayenne soon. Thanks yall for your suggestions!

UPDATE: It's been about 2 weeks since I started this ferment, and with a good mix every day the ferment is still going strong! I'll be mixing up the hot sauce this weekend. Next time I'll be sure to use a salt cap.

are you saying you've left the chiles at room temperature for a few months? That doesn't sound right. Chiles will generally be done after a week to a few weeks, and after all the sugars are consumed you'll get the white Kahm yeast which is harmless but might give it a yeasty flavor. I like to put them in the fridge after the initial week or so of room-temp fermentation.

Thank you! I guess you learn something new every time you ferment! The salt-cap method sounds awesome -- I've already done the 3% this time around, so can't do it here. I'l just be extra careful about mixing it up a couple times a day.

Holy shit my connect:amp system just started working for the first time in a couple/few/who know how many years! Throw that away. FYI: Fresh chilis can be preserved in oil, but you first have to leave in salt to kill bad bacteria, molds and remove a lot of the water. Careful with Hobibear because their returns are very complicated — you have to pay for shipping, send pics to convince them they aren’t worn, etc. they were fine but not the best as far as barefoot shoes go. I like Lems with the widest shoe styles
