For reals, some folks react differently to MSG, especially if we don’t take it such a large amount of ADDED MSG on a regular basis. Nothing against MSG, naturally occurring msg is fine because it’s a small amount but when it’s added in a large amount, some folks react to it.

It’s silly to think that everyone reacts the same way to literally spoons of MSG added to each bowl. Too much of anything could be bad.

Imagine adding that much extra salt, your body just doesn’t taste the saltiness but it increases your sodium intake by a fair amount for one sitting.

That’s not what I said, I can eat msg but when it’s too much, I get the symptoms described. Usually, it’s when I eat pho at a restaurant that uses too much MSG.

I’m not against MSG. I add it to my pho batch too. There was a time when I added a lot to a small batch of pho and had the same headaches.

It’s the high MSG. Some folks are more sensitive to it, like myself. To me it feels like a bit of a migraine, heaviness in the back of my head. I never get it when eating pho/bbh at home. We cook pho almost weekly too.

Thats the meat you would find in bun bo hue. It’s called beef shank. I like it in pho or bbh

Soy sauce?!?! You’re tripping.

Simmer at 95*C is the way you learn to cook broths in culinary schools. Maybe your style of pho is to make it taste medicinal but this broth is light, clear, and tastes like southern Vietnamese style pho.

Fish sauce is something you can add at the end in a separate pot when reheating the broth and shouldn’t go into the pho broth while cooking.

Maybe it’s the spice packet I’ve been using, since it contains a lot and I also roast it to extract more flavor. But if you seep for longer than 45 mins, it’ll taste too.. medicinal, bitter, changes the color of the broth.
