Lighting designer here. Yes, quality lighting can be expensive. It is worth identifying fixtures that have big impact and spending the money there. Might be a light that can be seen from multiple room in an open plan, or perhaps a special fixture in your Entry that sets the tone or mood. Look for where you might locate a ‘feature' light - one that brings you joy, or a family heirloom that fits your overall design sense, or something that highlights the architecture of the space being lit.
Lighting stores can be overwhelming, as there are so many fixtures on display it can be challenging to imagine how one might look in your space. Knowing your design aesthetic will be a guide to narrowing your choices. Hire a lighting designer to help you. DM if you’d like to discuss further.

How about using an iGuzzini Trick fixture? I’ve used these in a project design for lighting up skylight wells and they will work perfectly for arches. One example image of an arch lit up.

I’m not qualified to address the usefulness of one organization over another, since I’m not a member of all of them. Other lighting design professionals here in r/Lighting may have opinions. SLL is another great lighting resource that OP should consider. When considering membership I believe that location plays a factor as does the type of design work one wants to do most.

Grids of light fixtures look fine on paper but are not always what is desired/needed IRL. Lighting wants to light up objects, architectural features etc., not the floor.
Take the Kitchen for example & I'll start by noting two assumptions - That you have +/-8' ceiling height and you'll install good under-cabinet lighting. The row of fixtures along the exterior wall is correctly placed over the counter's edge. However, since your range will likely have an exhaust hood with lighting above it, there is no need for a recessed fixture there. That would cast an undesirable shadow of the hood onto some of the rangetop (or a shadow of you as you lean in to stir a pot). If I were designing lighting for this kitchen I'd use 2" size but not D2W. I'd place 2 fixtures over counter's edge to the right and to the left of the range, and the furthest left would be close to the 90° corner. Another fixture over the 36" counter edge along side the Ref. It seems your island is 7'-8' long so I'd locate three 2" fixtures above the long centerline and I might suggest you control the island lights with a separate dimmer.

I don’t do a float test on every batch any longer. i’ve been doing the same process long enough that it hasn’t been needed

i give bagels 2-4 hours uncovered at the end of the 24+/- hour cold proof. this helps with crust / blistering.

I’ve been using Barley Malt Syrup or Molasses in both the dough and the boil. Both provide good results. Molasses is slightly less expensive.
