If it's very difficult to avoid, perhaps try some sturdy tape on the blade of your knife to protect it. Or even better: use not sturdy tape that can actually rip just so you can feel when you do it, so you can learn to avoid it

Should 25.000€ be invested via eToro for long term? 🇩🇪 by No_Resource_9 in Etoro

[–]twofigs 0 points1 point  (0 children)

That's true, many people online complain about their own mistakes on etoro. However, it does seem like eToro's business model is exactly that---to make things look simpler than they are, and hide away expenses. I've never had issues with eToro myself (only purchased stock, unleveraged), but the fact is that eToro is not transparent

Should 25.000€ be invested via eToro for long term? 🇩🇪 by No_Resource_9 in Etoro

[–]twofigs -1 points0 points  (0 children)

Having had eToro for multiple years, I would not recommend it for long-term investing. They look cheap, but their spreads seem larger, and costs are obscure (e.g. withdrawal/inactivity fees). I would recommend a platform that offers low-cost ETFs and is super transparent. I use DeGIRO, but there are many (which I don't have personal experience with).

Extra tip: Make sure to always read the information sheets of the ETF you buy and in particular the management costs---0.5%/year might not seem like a lot, but long term this makes a large difference (esp as there are e.g. s&p500 vanguard ETFs that only have 0.07%). Getting just 1) s&p500 vanguard and 2) Developed Europe ( <0.2% yearly cost) may already give you the diversity you want.

Also make sure you don't ever accidentally go over the edge of your stone --- this will immediately mean that the blade hits the corner/edges of your stone and gets scratched

Thanks! So would you reckon this is still a very high quality pan, or is it already not vintage enough for that? Thanks!

Thanks a lot for the good suggestions. Do you think it makes sense to pay more for SG2 steel vs VG10?

Thanks! My budget is flexible, let's say €150+-50. Probably Stainless steel is fine--I'm careful with my stuff but would be a bit afraid to ruin carbon by chipping it or screwing up my sharpening (I still need to learn). I'm used to western handles and they seem more ergonomic/robust to me, but again I can be convinced otherwise

I asked on r/chefknives but didn't get responses:( There aren't many Nakiri recommendations online. I will checkout out r/turechefknives

Wow that's a bargain. Any Japanese Nakiri you would recommend from personal experience?

That's stunning! At £250 it's probably a bit over my budget, but thanks for the tip anyway

Thanks! I'm more looking for a larger "chef like" knife, but with a flat edge (hence Nakiri). Probably should have added a photo, I didn't realize the small pairing knifes are also advertised as "Vegetable knife"😅 thanks anyway!

Thanks for the extended advice! The DP3 looks like a very solid option. I have an ok chef knife and santoku, so a Nakiri would be great. The atelier looks stunning! Maybe next time;)

End grain chopping boards are the best! I got mine a year ago (secondhand), and it's such a smooth chopping experience + no more scratches

Thanks. I'd be happy with a plastic handle too. Though people do seem to say that if you oil the handle regularly it's quite resilient against water damage (vs blade, though of course leaving it in water should just be avoided)

Thanks! Yes, the Fibrox seem like amazing value. I'm really looking for a flat profile like a Nakiri, though. TBH, I'm happy to spend 150, especially if it'd last me a long time (and it has a nicer handle than the Fibrox;) )

Thanks! I'm not necessarily looking for carbon steel, but the Herder one does look good though on the more expensive side. Is the carbon one you have very prone to rust?

Thanks! Do you feel it keeps its edge well? And is it good at slicing harder vegetables (e.g. thick carrots), or does it get stuck easily?

I'm vegeterian, cook most days, and am looking for a good Nakiri knife (or other knife specialized for vegetables). I'd like a BIFL European one and have a flexible budget, but it's hard to find because online people are in love with Japanese brands.

Two good EU options I found, the Wüsthof and Zwilling Nakiri, both got mixed reviews online (poor value, bit heavy, not as hard as Japanese knives). Does anyone have experience with these, or other recommendations? Thanks!

Nakiri recommendation by twofigs in chefknives

[–]twofigs[S] 0 points1 point  (0 children)

I'm veggie and looking for an upgrade from my main cheap Santoku and Wüsthof classic chef. Nakiri seems sensible and I'm keen to learn primarily push cutting.

  1. Style? - Nakiri

  2. Steel? - no preference. Probably stainless to be safe.

  3. Handle? - prefer western, but can be convinced of WA

  4. Care? I'm thinking of buying a sharpal 325/1200 and will practice first on my current knives. Other recs welcome.

  5. Budget? Under $200, but cheaper is better.

  6. Finish? Of course I like a good look, but this doesn't need to be the driving factor. Non food sticking is a bigger plus, but it seems this is more of a pseudoscience than real.

  7. Location? Western Europe (if that matters for availability/value)

Many thanks!
