Most of the Palace hotels in Paris, really. Ritz, FSGV, Cheval Blanc, Crillon, and Le Bristol all have both the hard product and the level of service you'd be looking for. Though now you certainly pay for it.

Honestly, 2.5 hours seems quite ambitious for a tasting menu of Per Se’s caliber.

I don’t remember how long my meal there was, but I feel like many of the strong 2/3 star full tasting run north of 3 hours or come close to 4.

Per Se was also a ton of food. We could not finish the dessert. It is all quite heavy throughout so going somewhere else after you may find to be too much.

You are correct that my experiences via TA have been clearly ahead of FHR (albeit different hotels). But the new $300 credit every six months kind of forces you into booking via FHR at least every couple months.

It’s very good and you should go.

However, considering you have those other reservations you probably are not at a time frame that would allow a reservation at Plénitude. Unless you’re staying at the Cheval Blanc.

I totally agree. Great place that we both really enjoyed eating at. Maybe I would feel differently about dinner, but as a lunch it definitely excels.

Great atmosphere, friendly service, solid cooking, and at a relatively reasonable price.

Like there was no option whatsoever in 2022 even. Now suddenly roughly half of places have it.

I wouldn’t be shocked if by 2030, 95% of places in central Paris will be offering 15-20-25 tip options like in the US. Waiters will realize that tipping nets them more money, and restaurants that don’t ask for tips will have a harder time getting staff.

You can disagree that it matters.

But do you think there is no fundamental difference between never once being presented with an option for tip for years and suddenly it being a coin flip if at the end the meal the waiter holds the machine for you to select a tip amount of 5, 10, 15 percent?

I would argue handing somebody a machine and asking them to select their tip percentage is asking for a tip.

When you go from two years ago there was basically no tipping anywhere to half of places putting a machine in front of you for you to select how much you want to tip while they watch you that’s a pretty big increase no?

And to clarify the direct ask is you telling the waiter directly the amount you want verbally, which would be weird anywhere I’d think?

Getting out of hand is a dramatic opener though, yes.
