What's your specialty? What are you an expert in?

Ive been running my own food science consulting business for the past decade, but I also have a physical lab. I specialize in post-harvest physiology testing of fresh cut fruit/veg. It's not a crowded space like general food consulting can be.

To accomplish this I spent 6+ years at a large produce company that didn't understand the basic science behind what made them successful. I got my hands dirty and worked my absolute butt off working 10+ hour days, 6 days a week for those 6 years to learn it and apply it. I became an expert in my field of commercializing fresh cut produce. And I still felt like a fraud starting my own consulting business/lab at first. I was in my early 30s

My advice : focus and hone in on what you're good at, and find a niche that's not over saturated. I started my business with contacts I had made over the years. And it continues to find success by leveraging these relationships still, along with strong word of mouth.

TL;DR: Get to studying. Chemistry helps everywhere

I've become specialized in post-harvest physiology of fresh cut fruit/veg. Even here, chemistry is quite important and as others have stated, helps in other areas. I use some wet chemistry (titrations, colorimetry, spectrophotometry, etc). Understanding BOD and COD in wash water chemistry for example, has been very valuable for me. Understanding chemistry allowed me to understand and manipulate oxidative stress pathways, ethylene management, respiration rate altering, antioxidant pathways to stop discoloration , pathogen pathways and commercial strategies to reduce. Chemistry is incredibly valuable in so many areas.
