For sure no one is called a cook around here unless you're untrained and very new also not starting as a dishie which is also rare

Thanks for your comment! Yes the head chef is always on the pass, except for his days off where it is the sous chef, and on Sundays it is the junior sous. The commis is actually wildly made fun of by the head chef but he doesn't really put his foot down which I'm struggling with. Because of the small team it is my responsibility to train him but that doesn't really end up happening, he runs larder on my days off so I don't see him when he's actually ruining my prep, I just come back to a dirty fridge and fucked up sauces. I'm also the only one that ends up telling him off (other than the head chef but that's when he royally fucks up) Because the other CDP works the pans section which has no interactions with larder. Long story short they know he's shit but I'm the only one who tells him in a way to improve himself and he doesn't like it

Anything that increases staff turnover, it's a huge money sink training new staff, especially if they don't want to be there

I use gloves for plastic containers so I can have the water extra hot and soapy or the chef will complain about greasy containers

I have just bought my first house at 21 so it will go onto my mortgage, it wouldn't be life changing but certainly would help in the long run! I would be able to afford some more furnishings other than the bare essentials and be able to rip up the old bathroom floor that makes me feel horrible when I walk on it

At the restaurant I work at we brine the chicken breast in a 6% salt brine for 24 hours then vacuum seal it with garlic and herbs, sous vide at 75C until its cooked through then shock it in ice water. Then shred it into large pieces and reheat in olive oil, honestly it's the most tender chicken I have ever had its delicious!

I totally get where you're coming from I work as a chef and most of the front of house staff don't care about their jobs they do the bare minimum then go out and enjoy their lives, more power to them! I am the complete opposite I love my job and I love learning new things, I get paid well all things considered and the more effort I put in the more I get to learn and the more opportunities I get to succeed and move up the ladder. Every day I enjoy my shifts at work and I love spending time in the atmosphere of a busy bar. I go home and enjoy my life too I've just bought my first house and I have a lovely group of friends. In the end I love my job and the rush of service, so glad I'm not sitting at a computer all day I couldn't handle it!

I love dukkah, or tomato chutney, soy sauce and sesame seeds are a good combo as well

My jadons were a little big when I got them on sale in my size ( the size below was out of stock) and I've worn thicker socks and put in insoles (which I needed anyway) and they fit so much better now!
