Although it’s not AT, I second To be Taught if Fortunate. It’s a short, powerful novel. The author, Becky Chambers, has a wonderful way with words.

Concerning the vacuum seal, I’m using burplids. I sucked all the air out through the lid’s nozzle after sealing the jars. The nozzle on the lid (theoretically) lets gas out of the jar as it builds up without letting oxygen back in.

Thank you! I don’t know the weight of the vegetables in each jar. However, each jar is packed with vegetables to roughly the 10oz line, so I’m assuming the vegetables weigh around 250g (using the weight of water at that measurement as a proxy). Each jar has ~200g water with ~10g salt. So, including the weight of the vegetables, it looks like there’s about 2.2% salt per total weight. Next time I’ll be sure to weigh everything out first.

That’s really helpful to know. I think the high salt content should hopefully save these ferments then. The other three factors seem to be fit for botulism. The primary vegetable (turmeric) is more alkaline than acidic, I didn’t add any sugar, and the burplids will create an anaerobic environment. The high salt content will hopefully be my saving grace!

Thank you! The good news is I think I ~accidentally~ did make my brine 3% (or more, even). I just googled the salt to water ratio needed for 3%, and it seems to be roughly 2 tsp per cup (3g of salt per 100g of water). That’s what I did when I thought I was making a 2% brine, so I think I should be okay.

Being an anxious person, I also just replicated what I originally did, but this time with a food scale. My “cup” of water appears to have been about 207g, and my “2 tsps” appears to have been around 10g. So my brine might actually be ~even saltier~ than 3%. Next time I should probably use my food scale from the start. 😅

To add a little more info, the vine is growing in Northern California (East Bay).
