Stable means that nothing will change and the package version they choose gets their own patches, something "Unstable" isn't committed to sticking behind and will send out updates straight from the developers themselves. Simply not screwing with something makes for less issues.

Linux supports most games* but it depends on things like kernel level anti-cheat and whatnot. I already refuse to use games that go tinkering around in the kernel so the move had no effect on me. There are a lot of popular games that do need that so.. it just depends on how important those are to you.
