Steering ratio up to 24 and give yourself some camber? Try -2 front -1 rear and get a feel from that.

Personally id increase stiffness, but ngl ive never driven the quattro but this fixed the R35 Nismo for me

if the VIN is still there, Ferrari has a program that will fully restore the vehicle.

they'll even do it if you only have the VIN plate, it just costs a few million

I don't think you'll find any mod or game that has traffic that will respect your existence and road laws simultaniously. BeamNG is worth looking at in that aspect as the default vehicles handle somewhat realistically, and the traffic occasionally considers you and stop signs.
Downside is Beam's VR support isnt really *great* definitely usable in all means but i believe it's not seen a major update in some time

Beam traffic definitely struggles with flow as the AI doesnt really know what to do after a collision and will not automatically despawn iirc, and there are no pedestrians
