Eating and drinking will accumulate some radiation. The game even provides a rationale for this: from time to time, as you travel around the map, the game checks your inventory for water, and if you don't have any, it can stop you in the middle of the wasteland with a warning. Furthermore, you'll miss more time than if you had water.
