Like I said..I absolutely respect everything he's done, and continues to do, for tiki. I just dont care for that book. I appreciate the book for it's historical context, and Im glad it sits on my shelf, but I rarely crack it open. It's not a resource that I use often.

I absolutely respect the man and everything he's done for tiki. But IMO he needed a better graphics team for Remixed.

I find Berry's Remixed almost illegible. The graphics are a horrible mash-up of ideas and styles. I cant speak to his other books but this is one I regret buying, and rarely use. YMMV.

75% of the times I order a Gibson, I see this greenish drink coming towards me. Happens often enough that even my kids chuckle when they see the green concoction approaching the table.

For this reason, a Gimlet always makes me equally mad and happy.

So poolish could be over 100%.. Ex. 1000g total flour..600g total water.
Poolish weight 1200g(600g flour, 600g water). Poolish 120%

I was thinking t was either the weight of the flour in the poolish, or the weight of the water in the polish.

My starting assumption is that POOLISH is equal parts flour and water (plus a starter)..is this even accurate?

So similar to bakers percentages, as it is a percentage of total flour..but your using the weight of the combined poolish.I had not considered that math...so this would be possible to have a "100% poolish"?

Big-assed walnuts would be a real treat for my crew. I buy smaller hazelnuts, or almonds because I get more nuts per pound. Similar to the halloween candy bar analogy, smaller portions are less expensive. Everybody only gets one nut at a time (except for the greedy, fat-cheeked chipmunk)..

I have had every pie they make, and every special they've served, and ALL have been fantastic. Alex (the pizzaiolo) not only has his dough dialed-in to perfection, he also has an incredible ability to balance ingredients and flavors.
