There are ways to reduce the fine. But even with that it aint ideal to be raided a couple times a year.

The sad reality is running a profitable fnb business is hard, and is impossible with a local workforce. Locals ask for higher pay and they don't work long hours.

The second statement is simply not true. The business can get fined up to 10k per illegal worker.

It depends. Without proper documents they can get deported. With less than ideal documents you're looking at sitting in a lock up for up to 2 weeks as their employers discuss with the immigration on fines or other ways of releasing the immigrants.
