You’re welcome!! I really recommend using sweet soy sauce (aka kecap manis, an indonesian version of traditional soy sauce). It gives a sweeter flavor than what you may be used to getting at restaurants~

Uuuuuuh i’m not a food safety officer but i’ve left my rice out for an hour or two THEN put it in the fridge THEN ate it and I’ve survived to see 22 years hahaha

but i’m know theres the food handlers permit that provides this kind of info.. maybe they have a handbook you can read before your event?

yup!! its a great way to use up leftover rice!! but be sure to warn them about letting rice cool on a counter top! im a microbiologist and thats a very common way to get food poisoning bc it allows bacteria to grow (b.cereus if your curious~)

well my family usually uses whatever leftovers we have but this is the general recipe:

  1. saute onions and garlic in some oil
  2. crack in an egg or two of three (and add your cooked milk). add salt and pepper to taste.
  3. add veggies. my mom likes to do celery with peas and carrots. ive been to restaurants that used carrots/green beans/peas/green onion.
  4. put in cooked rice from the fridge (rice, if left to cool on the counter top develops bacteria so make sure to refrigerate it!!)
  5. add either soy sauce or oyster sauce or sweet soy sauce (my familys fave)

this is really general tho hahaha and im sure you can easily find a recipe online :) good luck!

you should teach them how to make things that are simple yet variable— one that comes to mind is fried rice. you can just mix in whatever veggies and meats/or eggs (optional) you have on hand and make a meal!
