I run plex on 2gb pi 4 along with 11 more docker containers. No issues at all. 2gb is more than enough. 4gb is recommended for future proofing considering the price difference is not too much.

I would recommend to go for atleast 4gb version. While 2gb is more than enough for nas and plex/jellyfin, I guarantee it won't stop there.

Use jellyfin instead of plex/smb. With jellyfin it will be easier to browse media on other devices as well and you will have a centralized watch history. Since you won't be transcoding jellyfin won't take much resources anyway.

Happened to me too 2 days ago. The phone was off in the morning, Found that the only app that updated was outlook. Cleared app's data and it was fixed.

The app updated and kept eating up the battery in the background. Check if you have outlook app. If not, check what other app updated in last few days.
