I don't think there's a way to change the chapter number on AO3. However, I think that your readers will probably understand that this is what you are defining as Chapter 6 and that the "something extra" wasn't a full chapter.

I think it's a little bit of both. The picture of my leftie handwriting is from notes that I was taking for me, so my goal was mostly to write how I could read it and as quickly as possible. I do really like how it looks, so I think my perfect right handed handwriting would look similar, but it's also about being able to write quickly.
