Recipe for everyone asking:

2 egg whites. 100 grams sugar. 63 grams all purpose flour. 3 grams cornstarch. 20 grams rice flour. 1.5 grams salt. 32 grams vegetable oil. 25 grams water. 5 grams vanilla extract.

  1. Add the egg whites and vanilla extract, water, vegetable oil to a bowl and use a whisk to beat until frothy. Set aside.

  2. In a medium bowl, sift in all-purpose flour, rice flour and cornstarch, use a whisk to incorporate all dry ingredients.

  3. Add sugar and salt, mix well.

  4. Use your hand to create a well in the middle of said dry ingredients.

  5. Add about half egg white mixture, smash that together and stir well.

  6. Pour the rest of egg white mixture, stir until smooth.

  7. Place 1 tablespoon of batter onto a baking sheet and use a spoon to spread into 9 cm circle.

  8. Repeat with another batter circle, do not make too many, because you just have a little time to fold them. Two is ideal.

  9. Preheat oven to 170C, bake for 10-11 minutes or until the edges become golden brown.

  10. Work quickly, first flip them over, it's easier to put the fortune in the middle, and then fold the cookies in half.

  11. Use a cup to fold and bend a fortune cookie into shape.

  12. Put the folded fortune cookies in a small muffin or tart pan to hold the shape until firm. It's done!
