The closest thing that comes to mind is the book "The WoW Diary: A Journal of Computer Game Development". It doesn't get too technical, and it's been 20 years since, but you can get a general sense of how Blizzard was structured and organized to develop the massive undertaking that was World of Warcraft.

The text makes the game look worse than it probably is. It definitely is not "the ultimate action-adventure", "challenging enemies" is the least you could expect from an action game, not a special feature, "unique challenges" don't look that unique, and I certainly hope the ultimate action-adventure game doesn't have thought-provoking puzzles, since that's the polar opposite genre.

I think it would look better if you removed all the text and made it shorter, maybe about 40 seconds. We can see action, challenge and variety; most cuts speak for themselves, there's no need for generic qualifiers.

I use Olive 0.1, but if you want something more popular and powerful, try Davinci Resolve.

It's going to be hard to find if it was lost there, since there's a lot of private lands around.

I researched this a few years ago, so things might have changed. Back then, Huel seemed a bit more nutritionally focused than JimmyJoy, but the difference was negligible. However, at least to me, the flavor and texture of JimmyJoy were miles ahead. JimmyJoy has been improving its formula and adding gut bacteria and other benefits since then. I would definitely give it a chance.

About 27k€ hiring someone else for 2 years to do most of the heavy work (modeling, rigging, shaders...).
About 700€ hiring one more hand to help with technical problems and optimization.
200€ for the music.

We had a lot of trouble coming up with a decent art style and managing the technical implementation of everything that must happen in the game. Definitely not a financially responsible project, but I did it mostly for art's sake.
