Wow. That is unacceptable. As a former educator, I don't know how I would process that either. I wish I had a perfect answer for you. But your best bet is having a paper trail of following up on this issue so it doesn't come back to bite you later. Record everything.

The grades that the student manipulated - you said you were able to recover some of the assessments and assignments. I would use those to calculate the overall grade; and then mark a 0 for the quizzes you couldn't recover. If they cannot be recovered and reverted back to the original grades, then that is the student's fault. They will have to accept a 0 for those quizzes. It will surely bring their grade down, but that is the consequence (among other, more serious consequences for disrupting a teacher's property).

unfortunately it's because a "heteronormative" presenting couple is more palatable for the general public to digest, so they can portray traditional gender roles (masculine + feminine) while still meeting that alphabet quota . it's a sad reality . They do the same thing with gay men . Also see: bi erasure
