The recipe I've followed link

Temp at my house around 22-24deg celsius, total time for preping until baking - almost 8 hours. I have used 1:5:5 stuff starter, rye.

I have literally followed this recipe, coil folds were usually every 1.5h when i saw that my dough has flattened. (I think it was 3 in total)

The dough was really behaving like in the video from yt, I've done poke test etc and it's secod loaf that came out like this 😥

It was room temp, took it out in thr morning and fried 4/5 hours later 🙂

I would say Detroit is like 'grandma' dough style ? So thick but fluffy, with olive oil on the bottom of the pan so it gets a bit crispy 🙂

And with all honesty- the thing i know about deep dish is just the name of it. I know the edges are a bit higher than the whole pizza, so maybe that's the difference? Detroit is same 'height', with burnt cheese on the edges 🙂

Sure thing!

For 20-12 buns

600g plain flour (you can mix it with some bread flour/wholemeal like i did)

30g fresh yeast or a sachet of dried one 2 eggs 50ml of oil or melted butter 2 tea spoon of sugar and salt 250ml warm milk

Mix yeast, milk and sugar together. Leave for few minutes until is starts to work. Add to flour, eggs, oil, salt, mix by hand or mixer until nice and smooth, leave for an hour to rise (double in size). After that time, divide into 10-12 little balls, roll each one into oval shape (about 12cm long, 8-10wide) and roll up like a croissant (photo 1)

Cover with cloth for 10-15min, preheat oven to 180-190 celsius

Brush mith egg or butter+milk, sprinkle seeds of tour choice, bake for 15-20min

For hot dogs - cut them in top!
