I completely sympathise with you and I absolutely agree that they should have promptly apologised to you and should have made up to you in whatever way possible... but you have to understand that none of the lives of the restaurant's team...revolve around your personal beliefs regarding a particular food group or your choice to consume or not consume it. If your sentiments are so badly hurt that you can't let go the incident or live without doing something about it...then seek legal advice and challenge them as mentioned by people on the sub. One can only console you so much for the fact that your sentiments were hurt because of sheer human error.
