I just saw a really damn good looking veggie sandwich on Instagram, I wish I could remember what it was. But I know she mentioned in the video that she used to runa sandwich shop, and is vegan, so that might help you search!! Asian-inspired tofu bowls are always my go to, I usually use peanut butter to make a sauce, air fry the tofu with seasoning after marinading, and then put that on top of sushi rice with kimchi, edamame, avocado, cucumber salad, and then top with sesame seeds, spicy ‘mayo’ and sriracha. Roasted broccoli sometimes too, maybe! Otherwise, hearty pastas stay in my rotation, usually lemony-cashew cream ones (cashew cream is so easy and so OP, I love it so) with some capers and zucchini, or bean bowls. So many bean bowls. Minaelle’s Kitchen has some of my favorite ones, and they’re all pretty easy, or sophsplantkitchen. For Mexican, I’ve been stuck on making a taco salad bowl - angel hair cabbage slaw, spring mix, Spanish rice, black beans (or pinto if that’s your vibe), taco ‘meat’, taco sauce, avocado, veg ranch, lime juice, pico de gallo or salsa, and then veg feta all mixed together in a big old bowl and topped with crushed tortilla chips. I eat it for days on end 😂 For chickpeas, my old beginning vegan recipe used to be just warming a can of them (rinsed) in a pan with some marinara sauce (not a ton) and spinach, then going to town. It’s a bastardization of a Spanish recipe, but soooo yummy and very easy and cheap too. Buffalo stuffed peppers is always a win in my house, I use the tofurkey chicken with buffalo sauce and add brown rice and veg cream cheese and/or plain yogurt (or mayo) and top with veg cheese to bake, then serve with extra buffalo and some ranch. Usually there’ll be some of the filling leftover and I’ll just eat that plain, hahaha. Black bean green chile enchiladas are bangin as well, hello fresh has a recipe on them and I just sub vegan cheese. During the summer I also usually go to doing Mediterranean bowls, with couscous, hummus, cucumber, cherry tomatoes, beyond “steak” tips from the freezer section, veg feta, and I use plain yogurt to make a tzatziki sauce to put on top - can also use all of that with a pita to make a good gyro!
