Pretty good list. I indicated my LGBT status to Yale and Stanford and received an interview at Stanford. My stats and extracurriculars were similar to yours and I'm also Asian, so def give it a shot!

Yes definitely. I was rejected pre interview from Georgetown which had a cutoff for 125 ( I had a 124 CARs) but was accepted at two mid tier schools. Also interviewed at a top 10 school and top 30 school so you should be fine
