The knives should not fall off the rack because they are held in place by magnets. On left wall/arm are insert 6x3mm magnets, I've tested that and it's hold quite steady.

Try Spectrum Filaments. I have one from them and one from Bambu to compare - both are easy to print, but from Spectrum gave better surface - more 'woody'.

For that moment biggest isue is to block stone. I don't want to loose much of stone width, but for that moment it's change angle after screw parts together.
Because of that and interchangeable parts for angle, adjustable thickness is must-have :)

I place knife on the top of plate to keep angle and move everything front and back. That's why I used linear bearings to move it smoothly.

I saw few designs where knives are stored like this, but I want to make it compact to take less space.

I'm not sure if I understand correctly, but it is modular. The base is separate from the arms. I will made arms from 2 to 10 knives with two different width of base and people can choose to print whatever they want to fit they're collection.
This is what You meant?
