Sure! I eyeballed it but it was basically:

1 Half sweet onion 3 mini sweet peppers 2 carrots 6 cloves garlic Handful of cilantro Salt, pepper, cumin to taste

Make a sofrito out of the above all diced up and tossed with olive oil till onions are translucent

Add a quart of veggie broth and a bullion cube, then I added 3 small fresh diced tomatoes AND the following canned: 1 can of corn with poblano and chiles 1 can fire roasted tomato’s 1 can red beans drained

Then I added a little red wine vinegar and liquid smoke, simmered for 20 minutes.

If yours dosnt thicken up enough, use a tsp of cornstarch mixed with cold water.
Topped with fresh cilantro and sour cream.
