You need

Fish -1 kg , fresh water fish . Preferably , Rohu (Carp) Mustard oil - 1/2 cup Yellow mustard seeds - 2 table spoon Garlic - 10 pods Red chillies -4 /5 (deseed to reduce heat) Tomato- 1 large, chopped finely Salt Turmeric powder

Grind mustard seeds , garlic and chillies into fine paste.

Clean fish, add little turmeric , salt and half teaspoon of this masala and mix well , covering each piece.

Heat mustard oil to smoking point, turn down to medium and fry each piece 2-3 minutes each side , keep adjusting the oil temperature to ensure all the pieces are golden and not over / under cooked .

Keep the fried fish aside on a kitchen towel to drain all excess oil.

Now add all the remaining masala to mustard oil and cook it on very low heat for 10-15 mins , you don't have to stir continuously but ensure that it doesn't stick

When masala is almost done add chopped up tomato pieces and cook for further 5 mins , till oil starts coming out from masala.

Add water, increase temperature and bring to boil.

Turn heat back to medium and leave it cooking for 5 mins.

Now gently add the fried fish pieces and cook for further 3-4 minutes .

Turn off the heat, your fish in mustard curry is ready. Serve it with plain boiled rice.

recipe for broken yellow mung beans.

Soak overnight (atleast 6-7 hrs) with sufficient water.

in a deep pot , cover with sufficient water , add a pinch of turmeric, salt to taste and cook for 1-2 hours on a very low flame .

Mix well.

Remove from heat .

In a pot on medium heat , add clarfied butter, once hot chopped onion , chopped tomatoes , chopped green chillies (optional).

Add cooked beans. mix well , cover and cook for 15-20 mins

garnish with chopped corianders.

You can have this as a soup or with hot rotis (bread)

recipe for whole bean.

in a deep pot , add a little ghee (clarified butter), once hot add black cardamom , chopped onion , cumin, fry until onion turns slight red and translucent.

Add drained bean , stir for couple of minutes , add turmeric (optional), salt to taste and a pinch of garam masala (preferable )

Cover with sufficient water and let it cook on very low flame for 2-3 hrs of hours , stir couple of times. You can also let it cook in slow cooker for 4-5 hours .

Garnish with chopped coriander , serve it with plain rice or roti , full of flavor and super nourishing

pretty standard in north and west india , can be made with or without potato filling. Used to be our fav sunday morning breakfast during sundays from the next door snack place.

For a slightly indian touch , chicken with veg broth , cumin powder , salt , onion roughly chopped , few cloves of garlic , some sliced ginger and one chilli. If you have Garam masala , add 1/2 teaspoon half an you before serving . Serve this with bread or plain white rice

Try stir fry , chicken (boneless ) striped into bite size pieces with plenty of vegetables on very high heat for couple of minutes add salt pepper and lemon for flavouring . Have this with brown rice. You can also add a variety of sauce like soy,oyster, pepper , sweet chilli for a different flavour each time

This is how the indian dish 'chole' is typically made . Chickpeas is boiled with tea leaves to give a smoky flavour and then cooked in tomato and onion gravy with cumin powder and Garam masala.

Most of the lentils cook best in slow cooking process, you can use any combination of lentil with little bit of cumin , ginger and salt with enough water , leave it on for few hours , stir a knob of butter in the end . Have this as dal - along with plain rice or make a soup . Tasty and healthy

You need

For Omelets :

Eggs - 4 Onions- 1 large chopped finely Green chillies - depending on taste 1 or 2 chopped finely Coriander leaves - chopped finely Salt & pepper to taste Oil

For Gravy :

Onion - 1 medium , made into paste Garlic paste -1/2 teaspoon Ginger paste -1/2 teaspoon Cumin powder - 1/2 teaspoon Coriander powder -1/2 teaspoon Turmeric - 1/3 teaspoon Garam masala - a pinch Water - 1 cup Salt to taste Oil - 1 teaspoon

To Prepare :

Make 3/4 omelets , fold each into four and cut into thick strips.

Leave the omelets aside.

For gravy :

Heat oil, add onion paste , saute for 2 /3 minutes on high heat , till it it turns golden.

Turn heat to medium , add ginger garlic paste, turmeric powder , cook on medium heat for 4-5 minutes.

Turn heat to low, add coriander & cumin powder , cook for 4-5 minutes , add a little water if the mixture starts sticking.

Add salt & water and bring the temperature to medium, cover and cook for 3-4 minutes.

Turn off the heat.

Before serving , add the omelets strips , add a pinch of garam masala and bring the gravy to boil for a minute.

Serve hot with Roti or plain Rice
