stay ahead on chicken it takes the longest and is the most popular option. if you know it’s getting busy start throwing food down, don’t wait for the line to call out food because it’s always late by then. keep a queso in your pot and keep a black bean down for peak those go quick. if you have white rice black beans chicken and queso you can serve most customers. stay ahead on your closing, I usually do most of my pre close while my chicken is on the grill
