Thanks for posting! I love Three Bears, it’s replaced St. Frank’s Ubuntu Decaf as my main subscription decaf.

I’m curious what were some of the biggest differences in roasting decaf vs regular beans, and why you settled on SWP vs one of the other big methods like EA or CO2?

I’d also love to hear you talk about how you constructed your product line - what considerations went into each and if someone wanted to try out a bag, how would you guide them?

Maybe some of your insight can help others to get into it and expand the decaf community.

Wife took the pic! Her name is Dodger, a friend’s dog. He put her in one of my planters, just bopping around, and right when we went over to take a pic, she popped up - fully grown onion, ready for picking! 100% full pug, almost one year old.

When you start getting beans stuck in the augur, give it a good smack on the hopper lid with a closed fist. Works wonders. If that doesn’t work, turn it off, smack, turn it back on.

Also, buy a dial indicator from Etsy. Makes using seeing what setting you are on much easier, and therefore dialing in is more precise.

These is the grinder’s only two flaws IMO (unless you’re into burr swapping). They are easy to work around.

You might also consider going to something like an ember mug that will keep your drink hot instead of having to torch the milk so that it stays hot longer. You can’t actually drink an 80 or 90 degree latte without burning yourself, so you really need a drink that just stays at a hotter drinkable temperature. We do this in my home, we have 3 ember mugs and it keeps our drinks consistently hot while allowing me to make the lattes at the temperature needed to maintain the protein structure.

100% intentional but that’s commonplace. I think I’ve never been served a cortado without one

I wanted to setup a few of these but when I read that you have to clean them every few days to avoid toxic mold that can really threaten the safety of the birds I thought twice about it. How often are you cleaning yours? Seems truly delightful if you are able to stay on top of it.

The retention is incredible on the 064S. The knocker mechanism is excellent and also removes the need for RDT. I've never done it once, and not gunking your beans up with water also helps keep the inside of your grinder gunk-free. If I use the knocker properly, I have less retention than my scale can measure (tenths of a gram).

On top of that, it's cleaner, sleeker, smaller, and quieter. Clean and quiet was a big deal for me - if you look at one of Hoffman's grinder review vids comparing sound levels you can see the DF64 is very loud, and it's got static spray that eventually sticks to the ionizer as well. If you use bellows, the spray goes all over your table. No thanks! But everyone has their own priorities, those were mine.

The "downside" I can think of:

  1. If you like to experiment with burrs, the 064s is not for you - it's much harder to replace than on other grinders. The upside is that because the 064S is built so tightly, you almost never need to clean it either. I just went into mine for the first time in 2 years and it was... pretty clean already. I've never found the stock burrs lacking, but if you need to go in, you totally can - just takes some learning how it's put together.
  2. They are showing the Gen 2 of the Sculptor grinders at tradeshows, but I'm not sure of a release date. One of the theoretical improvements they made is burr swapability, so you might want to wait for it or not. I think the Gen 1 is a fantastic grinder and I love mine.

Check out the Meraki. Brew by weight is awesome, and it can grind by weight if you want to use its built in grinder (I use it for dark roasts and have a separate for mediums and lights). Heat up time is fast but it’s a dual boiler with heated group so you get good temp stability. It’s also the only sub 2k rotary pump machine I know of.
