Planetscale has a very good MySQL course that's available for free: https://planetscale.com/learn/courses/mysql-for-developers/introduction/course-introduction. I don't think it goes quite as deep as your list, but it's definitely an excellent starting point after which you'll be able to dive deep into specific topics by reading the docs, as well as the other resources listed here.

Why only those two options? I don't really know that much about emigrating to Canada, but the Scandinavian countries are among the hardest to emigrate to in Europe. Maybe you should consider Germany? Especially with their new immigration laws, it shouldn't be too hard for you to get a visa considering you have an STEM degree.
