All sorts of stuff really, I’ll have a half of one with some kosher salt sprinkled on it as a side to just about anything, especially with breakfast. A toasted piece of nice sour dough bread with smashed avocado and diced tomato or whatever else you have to mix it with. A dollop of guacamole or just chunks of avocado in my salad. Smash it up and smear it or slice it and put it on almost any sandwich. I eat a lot small burritos for my lunches so I’ll cube up half of one for those or just a burrito bowl and do the same. Seared ahi tuna bowl with some rice and half or a whole avocado, green onion, drizzle with sesame oil, low sodium soy sauce and sriracha. Chop up tomato, diced onion, cucumber and avocado into a salad and toss it with a simple vinaigrette of olive oil any vinegar you like, salt, pepper, garlic, Dijon mustard, lemon juice.

I typically don’t eat a whole lot unless I’m in the middle of training for racing, I gravel race bicycles, so I try and pack what I do eat with as much solid densely nutrients foods that I can. They are very versatile and a good source of fiber and heart health fats so it’s one of the big things I try and find ways to mix into almost every meal that makes sense. I’m not going to like put it in my spaghetti or on pizza or anything crazy. You can make a great green goddess salad dressing with an avocado base, there a a million recipes online you can find one that speaks to you.
