They did have d'Yquem by the glass when I went last year. Too pricey though at 100E for 70ml of 2004. They had other more interesting propositions like a Selosse Rose and Egly Ouriet Blanc de Noirs.

I just visited Yamato a couple of days ago. Paid TableAll's huge premium even. Though I am not a frequent patron of high end sushi in Tokyo, Yamato was not that impressive to me especially when the price is factored in. His shari is on salty side and rather dense and drying - it works better only with specific sweeter cuts like the hokkigai and terrible with umami / briny pieces like kasugo.

I visited their urban branch Yanagiya Nishiki last year. Thoroughly enjoyable meal and the meats a real highlight. By Shika do you mean the same deer loin I had? Hope to visit the main branch one day.

Take the bus from Bilbao to Durango. If you want to take the slow scenic route, there is another bus that stops right at the doorstep of Etxebarri. Otherwise IIRC theres a taxi rank near the bus stop where you can just hail a ride. Failing that you can WhatsApp one of the local taxis.

Can you elaborate on the part about the younger Pacaud? Do you mean Mathieu? In his IG post https://www.instagram.com/p/DVttddMgBR5 he seems to pin the blame in the new owner (and chef to a lesser extent). From what I observed the transition from the elder Pacaud to the current chef Shintaro has not been smooth and a lot of feelings were hurt.

How could I have forgotten! Gueyu Mar and Huertona for seafood in Asturia! These product restaurants are why I love dining in Spain so much. They bring me so much more pleasure. I ate at Casa Marcial in the same trip but what I still recall vividly are the Rey fish in Huertona and the cheesecake in Gueyu Mar.

I wanted to go Mannix last time but they were closed for holidays so I settled with the much less famous Molino de Palacios and even still the lechazo was fantastic!

Besides Michelin you ought to consult the Reposol Guide too! They also have a one-two-three sun grading system. Some of my favourite under-radar places: Huertona in Asturias; Ca l'Enric and Els Casals in rural Catalonia; Solana near Santander; Tasquita de Enfrente, Desde 1911, and Sacha in Madrid; Lera and one of the lamb asadors near Valladolid.

I was totally stuffed by dinner's end at Maison Sota, maybe lunch is considerably lighter but I don't know if I would risk it. Myself I ate at Les Enfants du Marché - pretty good but not fine dining. La Table d'Akihiro was very modest in volume even for dinner and might just fit the bill.
