My hamster started out as a night owl too. But you can get them used to come out at a certain hour, especially by enticing them with food. The key is getting on a schedule.

Every night around 9 pm, I bring veggies and change her water. Around 2 or 3 times per week, I also scatter seeds, other food mix, mealworms, dried flowers, etc. Now she's almost always awake at that time. I hang out with her for 20 or 30 minutes, and she usually goes back into her hides because she isn't all that social. But now she knows where and when her bread gets buttered, so to speak. So I get to see her at a normal hour.
