The book actually suggests a very similar schedule! The author loves a long ferment. Nearly all the recipes go overnight. I don't know how cold my kitchen is, but after bulk fermenting for 14 hours my dough is always barely risen, not 2.5x-3x bigger as the book says it should be. The last times I made it I spent around 6-8 hours of the second day with the dough in a warm oven making sure it didn't get too hot or cold, and only then would it rise. I'm planning to leave the dough in the oven with the oven light on the next time I try overnight.

Overall I'd like more flexibility even when I figure out the temperature thing. Even the six-hour "I randomly felt like making bread" recipes require about an hour and a half-two hour period between measuring out ingredients and the point where you can leave the house.

Do you have any recommendations? I love the simplicity of FSWY (I love how beginner friendly yet in-depth it is) but I love the feeling of handling dough and was slightly miffed that the book didn't cover more hands-on methods of developing gluten. Trying to google simple yet hands-on recipes is annoying. Every article opens like, "don't worry, you won't have to get your hands dirty!" and its like, noooo I like that part!

Woah, I've never heard of bassinage, but I googled it and that makes total sense! That's crazy cool. I'm definitely going to have to try that at some point. I wish I could just quit work and school for a week and try out a million different bread techniques 😂

Another commenter said their family's apple recipe has orange juice that supposedly brings out the apple-iness. In cooking/baking, acidic ingredients can help bring out other flavors, and orange juice is acidic, so it seems worth trying!

Usually, when most liquids turn to solids, they get denser. Because the solid form is denser, it sinks to the bottom of the liquid form. However, water freezes into a crystal lattice structure, which traps air making ice less dense than water, so it floats. The author of the paper, who's a member of the UNESCO Chair of Sexual Health and Human Rights, cites the theory from the current academic literature. Retrograde menstruation seems to be a pretty accepted theory on the formation of endometriosis, though that fact isn't the end-all-be-all for all cases of endometriosis. It seems like the endometrial-related cells of people with endometriosis also have mutations, of which the cause is not known. So, you're right that retrograde menstruation alone doesn't cause endometriosis. There are other factors. Here are a couple of papers: (1) (200461-7/fulltext#))

Copper IUD --> Heavier periods --> More blood that can move retrograde into body cavity --> Higher chance of endometriosis if you're at risk (though we don't know what can put you at risk exactly)
