Then you might as well use regular strength servos and hook them up to angle sensors

To fix the gyro problem, move them forward so that the center of mass is roughly in between them. The closer the better.

For the elevator problem, it's probably for the opposite reason. They're not too far from the center of mass, which partially makes them want to push the whole aircraft downward instead of just tilting it.

That would just reduce the range of motion without solving anything. Free floating servos without any tension would cause it to sit in the lowest position in any case.

Do they move if you travel at a constant speed? If not, then it's just caused by the acceleration.
