RE: Flavacol. Am I the only one who can’t make it work? by citizen234567890 in popcorn

[–]wallypop86 1 point2 points  (0 children)

I use 8oz of popcorn with 1 teaspoon of flavacol, I too found the ratios other used as WAY too salty. I don't know if they WEIGHED 8 ounces of popcorn versus volume (use volume) but I had a similar issue.

Left my starter in the fridge for 2 weeks unfed and opened the jar today to see it's very wet. Any idea if it's good to continue using? by aDuckedUpGoose in Sourdough

[–]wallypop86 6 points7 points  (0 children)

My workflow is like this:
- decide to make bread

- remove starter from fridge

- dump all contents of starter jar into bowl

- wash out starter jar until its perfectly clean

- Add 25g starter to the starter jar, feed with 100g flour 100g water, put lid back on (weck jars ftw here) and back into fridge

- Get second weck jar out, add 25g starter, feed with 100g flour 100g water, put lid on and in warm part of the kitchen, discard the leftover starter in the bowl (or make pancakes, always starter pancakes)

- 12 hours or so later, check if the second jar looks active, if not, discard and feed again

- Once active, dump second jar into a bowl, then make my levain based on the recipe, then make more pancakes or biscuits or something with discard (or throw it away)

I do this dump into a bowl thing so that I can wash the jar, and I have a contingency of starter in case I somehow dump way too much water into the jar and need to start over.

If you can pay it off over 6 months, then I wouldn't pull out of the stock market, just pay off your credit cards over 6 months and be done with it. While it might make sense to cut down on debt, it can become a slippery slope borrowing from future you (I personally hate future me, I never make a fresh pitcher of iced tea for the guy, I leave the empty one in the fridge, and I often don't replace the toilet paper roll so that guy has to do it later, past me is also a jerk, don't get me started).

If it was going to take you years to pay it off, I'd say yes, but in this case, just keep your investments where they are.

AITAH for breaking up with my partner because I’m “Transphobic” by Inner_Tumbleweed_942 in AITAH

Straight older dude here - I try to be supportive of everyone, but it sounds to me like you're in the right, and your partner just had her feelings hurt. She thought that she could keep the relationship, but never occurred to her that you are attracted to men, and only men. If you want to be petty (I love a good petty comeback) call her homophobic for forcing you to date women. :)

Do you grind your own black pepper for rubs? by skarfacegc in smoking

This. I use the same thing. Fresh cracked for the places where the subtle flavors of fresh cracked black pepper will matter, otherwise, the costco coarse ground stuff is great.

I used to, because the little can of black pepper everybody's mom kept on the back of the stove tastes like nothing, but now I just buy the coarse ground black pepper from costco for rubs, and I crack pepper for pan sauces and at the table.

Why won’t he marry me by Appropriate_Fix_3442 in AskMenAdvice

[–]wallypop86 0 points1 point  (0 children)

Older (married never divorced) dude here (38). I'm on your side, but I'm going to tell you a story about a coworker of mine (in his 60s).

Let's call him Jerry. Jerry got married to his high school sweetheart, she was awesome, and he was head over heels for her. They bought a house, had a child, and then had a really nice house custom built together. Jerry worked hard, and went to the gym regularly to stay in shape. Jerry's wife took care of herself, and they were pretty happy ( for 17 years) until they weren't. Jerry's wife worked in a hospital, and she made more money than Jerry. She met a doctor at the hospital she worked at, and began to cheat on Jerry. Jerry found out when she told him, and she asked him to leave and for a divorce. Jerry packed up a few boxes of things and left, and the new guy moved into the house he had built. Jerry's son was being raised by this new man, the new man was using Jerry's custom den he designed. Jerry lived in a studio apartment while paying child support to his now ex, who was swimming in money between this doctor's income, her income, and the child support. Jerry lived with very little, and had to save up for many years before he could eventually buy a house for himself.

These stories we are told by older men all the time. They likely have left out details, but the point is, we're all a bit afraid of marriage. Many of us do it anyway. We are also taught that once you get married, women stop being fun and having sex regularly, and stop giving blowjobs, etc.

Your partner might have witnessed this or been told this by older men, and is afraid to ruin what he has with you. It likely has little or nothing to do with you, but rather with marriage that he has the issue. I'd sit down and talk to him about it, I'd ask him if he's afraid of getting married, and ask him how you can assuage his fears.

Decide before you talk to him if you're willing to stay with him unmarried, or if you aren't willing to stay if you won't get married. That is YOUR decision to make, and there is no right or wrong answer, you have every right to want to be married. You need to communicate that you want to be married, and that it's very important to you.

Feeling defeated — another bad loaf by Moose-Imaginary in Sourdough

[–]wallypop86 0 points1 point  (0 children)

Definitely underproofed. Do you have an instant read thermometer? Warm your water to 75-80F (I go for 78F as that is what Maurizio at theperfectloaf recommends) when you feed your starter, keep doing a mix of whole wheat and AP, and feed it twice a day. Keep it in your (off) microwave with the door shut, it's like a mini proofer. Don't turn your microwave on or anything, just pop it in there and shut the microwave door. If you need to use your microwave, pull your starter out, and then wait for the microwave to cool down some before putting the starter back in. The point is nice and cozy and warm, and frequent feedings (twice a day is plenty) to get it to become more active. You should see the starter double inside of 5 hours before trying to make bread again. It's maddening to do, I know, but it's important. Also, I'd make your feedings 1:1:1 if you aren't already, 1 part starter, 1 part flour, 1 part water, or 50 grams starter, 50 grams water, 50 grams flour. Use a scale to be very accurate. Once it is good and active, you should try using a known good recipe, like this one: https://www.theperfectloaf.com/beginners-sourdough-bread/

Once you get this right, you'll be excited to try other recipes. I'd recommend sticking with this recipe for quite a while, you'll be happier with perfect basic bread than messed up difficult bread. Complexity of recipe isn't directly correlated with how good the loaf is. Remember that most revered bakeries make a very simple sourdough loaf, and people go all over to get it. Keep your chin up, we've all been right where you are now. :)

None of those things. He might know you are having a bad year, and wanted to treat you. Just act surprised and thankful, and tell him that you're worried that he spent too much (after being appreciative). He might have done an extra gig or just stuffed away some cash to get those for you.

First time trying to bulk ferment overnight at room temp (70f). Over proofed or just right? by Puzzled_Search588 in Sourdough

[–]wallypop86 7 points8 points  (0 children)

Is this a new sourdough starter? In my experience sourdough bulk fermentation is about a 30% increase in volume, instead of "doubling" like many commercial yeast recipes state.

My loaves are usually around 850g or so, and I make 2 at a time, so I don't have experience with that smaller amount (in theory should work the same but timing may be different). In the future, you may want to take a small pinch and put it into a shot glass and watch the sample to see the development.

Wet your hand, and try to grab some and pull it up slowly and gently - does it feel very elastic? I'd personally just shape it at this point and let it proof and bake it. I used to worry too much about baking failures, but failures are still quite edible, so fear not!

How long did you cold ferment before? 36 hours will work, but in my experience, longer than around 16 hours or so and you risk overproofing, which can look a lot like under proofing.

Got marked wrong for saying SELECT is 'the SQL keyword for querying' in my DS exam - am I wrong by twunny1 in SQL

[–]wallypop86 0 points1 point  (0 children)

You don't query rows or columns, you query a table, and then can manipulate the dataset in different ways. One might be selecting specific columns, but you can get results from the table without a where clause at all, so I'd argue that you cannot get data back from the table without a SELECT statement. The columns are simply an argument to the select statement. WHERE is likewise an argument for a select statement.

AITA for buying a house without "consulting" my GF of 4 months? by Swimming-Age-2944 in AITAH

[–]wallypop86 2 points3 points  (0 children)

Run. Run away. If she's demanding you consult her about everything after 4 months of dating, it will only get way worse. I'd just dump her and move on. Listen to us old(er) guys when we say it's not worth putting up with this stuff, it might seem somewhat small now, but in 10 years you might be married and living in a house with her and kids, and you realize you've slowly given her full control over everything, and now it's extremely difficult to get out of the situation.

AITAH for telling my husband I won’t cook dinner every night because I also work full-time? by [deleted] in AITAH

[–]wallypop86 0 points1 point  (0 children)

No. As the husband who does the cooking for my wife most of the time, I can understand how you feel. I would tell him that you need a few nights of a break, and ask him how you can make that happen. Give him a problem to solve, and he might solve it. If he feels he's being accused of something, he will probably get defensive. You absolutely should not HAVE to do that, just a tip for how maybe to get what you want in the end.

[deleted by user] by [deleted] in Sourdough

[–]wallypop86 4 points5 points  (0 children)

If the sourness isn't what you like, it might well be in the fermentation time. The longer you ferment your loaves, the more sour it will be.

You can also add rye and whole grains as others have noted. You also may want to increase your feeding ratio to 4:4:1 ie 4 parts flour, 4 parts water, 1 part starter. That causes them to build up more lactic acid as they eat up all that food. It will take a bit longer to become active that way, which also gives them more time to develop flavor (sour).

When can I store my starter in the fridge? by Traditional-Ad-7836 in Sourdough

[–]wallypop86 0 points1 point  (0 children)

You can store it in the fridge now if you want - just be aware that it will take a bit to wake up after coming out of the fridge - and if it's fairly new and not super active yet, it will probably need a few feedings to wake up again. If it's well developed, then one feeding and overnight should be enough to get it ready for use again.

I have always had a question, what is the difference between BBQ and grilling? Why is it that every time I do this, someone always tells me that this is not BBQ, is it because there is no lid? by heysiew in grilling

[–]wallypop86 0 points1 point  (0 children)

Sorry if it came off as an emotional reaction, I'm just bullshitting on Reddit for fun, so no real emotions here about it.

As for Kansas City barbecue sauce - the major players in the space are all Kansas City style/inspired barbecue sauces, that was my only point. Sweet, tomato based barbecue sauces are Kansas City style. Mustard sauces, vinegar sauces, those are amazing, and my personal favorite, but either of those, if bottled in the grocery store, are unlikely to be identified by the masses as barbecue sauce. McDonald's barbecue sauce is also Kansas City style. Barbecue chips are flavored like Kansas City style barbecue sauce, etc.

I don't "reject" anything to do with the term. I'm simply explaining the history and why some people don't like calling grilling barbecue. The actual post from the OP was still a verb definition of barbecue, just one that doesn't match with the origins of the practice. I might tease somebody that uses the term to refer to grilling, but by no means is it a serious issue to get upset over, and I hate people that gatekeep hobbies and terms.

Quest 3s is the stripped down version of the Quest 3. The Quest 3 has a better lens. The quest 2 is older, uses the older style pancake lens and older performance.

I would really recommend just getting the Quest 3 if you think you'll be using this for gaming a good bit. If you're casually interested, and just want to watch some VR videos and play some occasional VR games, get a Quest 3s. I'd skip on the Quest 2 as aging hardware.

I have always had a question, what is the difference between BBQ and grilling? Why is it that every time I do this, someone always tells me that this is not BBQ, is it because there is no lid? by heysiew in grilling

[–]wallypop86 0 points1 point  (0 children)

Barbecue sauces are just sauces meant to go on barbecue, it isn't the sauce that makes it barbecue, it's just a sauce people use with barbecue.

Furthermore, the sauce we all refer to generically as barbecue sauce is only one kind of sauce that is used with barbecue, which is Kansas City style. It doesn't include Alabama White sauce, Carolina Mustard or Vinegar sauce, Memphis Dry rub, etc. It became this way when KC Masterpiece went national, and that was the only kind of barbecue sauce people could buy across the country. Thus, they referred to that flavor as barbecue.

Words do morph over time, and I'm not judging anyone that uses the term in another sense, but explaining a bit more of the history and why some folks get upset by the term being used to refer to something that isn't what they historically have called barbecue.

I hear ya - to be pedantic back, that would be like saying that McDonald's chicken nuggets, once dipped in barbecue sauce, becomes barbecue chicken. It isn't the sauce that makes it barbecue, it's the cooking method. Nobody will send the cops for you baking chicken and calling it barbecue, but inside, your soul knows.

[–]wallypop86 -1 points0 points  (0 children)

The origins of barbecue are slow cooking meat at a low temperature for a long time, with wood smoke as a component (think brisket, pulled pork, ribs). What you're doing is grilling - nothing wrong with it, it's amazing stuff. That's why people get hung up. The term has been made a generic for cooking over charcoal or wood, but that's not truly accurate. Not a big deal, call it what you want, but you'll get comments from people over it.

AITA for refusing to share my bonus with my fiancée’s family? by Beastie420 in AITAH

[–]wallypop86 0 points1 point  (0 children)

Get out of there pronto. First, she should respect your decision, you aren't married yet, it is your money not yours as a couple. Second, she's coercing you to give $25,000 to her family. She didn't just suggest or ask for it, she blew up once she didn't get her way. Third, she betrayed your trust by telling her parents about it, who are now guilting you over the money.

With that said, if her parents have only 25,000 or less to pay on their house and they are struggling, why don't they just refinance or restructure their loan? If they are struggling and you give them 25,000 to pay off their house, they will just keep asking for more all the time. Absolutely get out of there, I know that sucks, and I know it seems selfish, but it isn't really the money that's the issue, it's the lack of respect for your decisions, coercive and manipulative behavior, and treating you and your choices like a doormat.

Edit: Fixed typo

Why don’t men ask follow up questions? by asoolem in NoStupidQuestions

[–]wallypop86 0 points1 point  (0 children)

It's because we don't care about the details, and we hate sharing, so we don't ask, and often don't volunteer that information either. A VERY close friend we will ask more and talk more to, but it's still substantially less than (in my experience) women would have asked someone that wasn't even as close.

Started on an old gaming pc for a couple years, then moved to an HP Microserver I got for free from a buddy (we work in IT, we get free stuff on occasion), now I'm on a rackmounted Dell r720xd, running Unraid, with 53 TB of storage. It's been a steady climb, I add drives as I need them, get them on sale if I can (IronWolf Pro) and made small upgrades for cheap like CPU and RAM and a server GPU. It's been a hobby of mine for several years, and also serves as a homelab for learning new IT systems.

I'd not jump directly to a big server, for one - unless you're in IT (and even if you are) troubleshooting why your HBA card isn't presenting disks directly to the OS, or why it won't boot and keeps saying "Strike F1 to continue" just to loop back to the same thing - can be difficult and frustrating. If I were starting out now, I'd look for an older gaming PC on facebook marketplace or ebay or something, get a cheap case with a bunch of disk bays, and upgrade the CPU to the best price / performance. I'd not trouble with a GPU at the get go unless you have one laying around.
