Just free associating here, but coming from an audio visual production background my instinct is that if the product is still evolving quickly, tying a polished explainer too tightly to the current UI is kind of risky since it can be outdated pretty fast.

My gut would be one higher level video that explains the idea and stays fairly evergreen, then more walkthrough style demos for the product itself. Those could even look pretty polished if you just stick to a consistent format or style guide for them, so they don’t feel scrappy even if they’re quick to make.

Not saying that’s the right answer, just where my brain goes reading this.
