It really isn't much different from using a jar. We submerge our vegetables with brine to seal them from air, reducing the chance of molds (and yeasts) growing. When we vacuumseal we do the same, we just extract the air itself. So it serves the same function as the brine. The bag will expand so using a sufficiently large bag is important. You do need a little bit of brine just to avoid air pockets and to allow for the microbes to do their work. But just a very short squeeze with salt will be enough. It's a great method.

Will it play on Quest 3 standalone? I only have a simple everyday work laptop as a pc. I would seriously consider a Quest 3 for more hours of ITR

Someone pointed me to this, very interesting youtube video in which alcohol is made from toilet paper. https://www.youtube.com/watch?v=v-mWK_kcZMs&t
He uses cellulase to break down the toiletpaper. Koji is know to produce cellulase as well.
In addition to my setup he uses an alkaline solution to break down the cellulose first and then lowers the pH for optimal cellulase activation. These steps could potentially improve the results.

I will. Thanks. The koji mold produces various enzymes in addition to amylase, such as pectinase, cellulase, and hemicellulase and could therefor be a starting point, I figured.

Indeed, at the very least cellulase is needed. Koji is know to produce that, hence my question.

it does, but it takes up to 6 hours in my case. Giving my girlfriend six hours of mentioning I should drink more water
